Pesto Pasta Recipe with EVOO

We have no doubt that this recipe will allow us to enjoy, apart from a delicious dish, all the flavor of an oil that will enhance its taste such as our Beneolive olive oil with Basil flavor. It is also very simple to prepare and in a few minutes we will have a delicious and fast meal.

The ingredients that we will use for two people are:

Pasta (the one you prefer)200gr
Beneolive basil olive oil80ml
Pecorino cheese30gr
Parmigiano reggiano cheese30gr
Garlic (without the core)1 clove
Fresh basil50gr
Pine nuts20gr
Sea saltTo taste

PREPARATION

 We will boil the pasta following the manufacturer’s instructions. When we have it ready, we put it aside in a strainer while it drains.

 We proceed to wash the basil by removing the leaves from the stems and then we will only dry the leaves.

 In a mortar we will place the leaves together with the coarse salt and we will crush them, then we will gradually add the leaves one by one until we have them well crushed.

 The next step is adding the garlic and the pine nuts and proceed to crush them until we have a homogeneous paste. We add the two kinds of cheeses and we mix them well with the pestle.

 To finish we add the beneolive basil olive oil and mix with a spoon, if we want the pesto to be juicier and less dense we can add more olive oil.

 According to the Genoese tradition, you have to pour the sauce in the bottom of the plate that we are going to serve the pasta and then proceed to stir it so the sauce and pasta are well integrated and voila, you will be ready to enjoy a delicious Italian meal with an exquisite flavor.
