Beans are a dish that cannot be missing in our gastronomy because they allow us to prepare them in many different ways in many different dishes. This time we bring you a delicious recipe that is very appetizing this season.
Ingredients
Red kidney beans | 250gr |
Half a large onion | 1/2 units |
Garlic | 4 units |
Red pepper | 1 unit |
Fresh chorizo sausage | 200gr |
Hot paprika | 1 teaspoon |
Salt | To taste |
Summum extra virgin olive oil | To taste |
Preparation
In first place, try to leave the beans to soak the day before, this will make it easier to cook them.
The next morning, cook the beans together with the pepper, half an onion and garlic (You can use the pressure cooker as it works best for you).
While the beans are cooking, we will take the chorizo with our hands and we will try to break it up until we get the texture of minced meat, which is why the fresher the chorizo is, the better is the result. After that and in a frying pan we will add Summum extra virgin olive oil and we will proceed to fry the chorizo trying to get it in very small and fine pieces. When it is done we will turn off the heat and put it to one side.
When the beans are cooked, put them through a hand blender (do not add all the water from the beans so that it is not so liquid) to make a very fine cream without chunks, add some of the chorizo that we fried, the spicy paprika and salt to taste.
Finally, serve in bowls and top with a little of the leftover chorizo and toast croutons and you have a delicious and easy hot cream, either as a starter or for dinner this winter season.
